These stalls were mostly put up in the markets as those were the busiest places in the whole village. The idea of gossiping and munching on something does not seem bad at all. In the beginning, there were only a handful of items that were categorized as street food but with time the number kept on increasing. Today we have every district of India famous for their unique street food. The main reason behind their growing popularity is their similarity to finger foods. These are prepared in less than 10 minutes and are a party for your taste palette. In the northern part of India the street foods are creamier and use yogurt and chutneys (Indian sauces made from green chilis or tamarind) along with fried potatoes, served with coleslaw. Wehears, when we go towards the south idlis (rice cakes), and dosas (unsweetened pancakes made from lentils), are more popular. Other street food dishes like pav bhaji which is a bread served with a flavourful mashed potato stew take the top ranking. Given the history of colonization in India, street foods were also influenced by them. From the kebabs to chai (tea) everything has a touch of colonization in it.
